Probiotic bacteria are useful for health in many applications, but the challenge is keeping them alive, especially in a shelf-stable product. The goal of this project is to encapsulate bacteria of relevance to skin and oral health in a way that keeps them alive in oils, creams, or jellies.
An additional goal is to image the bacteria in the capsules with advanced microscopy techniques, permitting us to directly observe their growth within the capsules.
